Crispy Cheese Smash Burger

Ingredients BURGER SAUCE
  • 1 cup kewpie mayo
  • ½ cup ketchup
  • ¼ cup yellow mustard
  • ⅛ cup hot sauce
  • ¼ cup small dice grillos pickles
  • ¼ cup finely chopped caramelized onions
  1. Roll the ground beef into a ball and place it in a very hot cast iron pan, use parchment paper and press the burger down until almost flat. Once the burger has an even golden brown crust, use a paint scraper (or flat spatula) to ensure the crust sticks to the patty when you flip it, then after 20 seconds take it out of the pan.
  2. Lower the heat, put the shredded cheddar in the pan. While the cheddar is crisping in the pan, toast the bun for 2-3 minutes in a preheated oven at 350°.
  3. Place top bun on top of crispy cheddar so it sticks and remove from pan. To the bottom bun, add the burger, caramelized onions, burger sauce, and pickles. Place crispy cheddar bun on top and enjoy!
