Cooking with Grillo's Pickles


          The Grillo Family prides themselves not just in pickling but cooking as well. Below is a list of recipes that use Grillo's Pickles as ingredients. Try them out for yourself, and please send us in your recipes and we'll publish the tastiest ones on the site.

Ingredients:

  1. 1 ea large celery root - (soft ball sized) Peeled and chopped into bite sized pieces
  2. 1 T lemon juice
  3. 1 T Grillo's pickle juice
  4. 2 T Extra virgin olive oil
  5. 4 Grillo spears - chopped small or pulsed in food processor
  6. 2 T capers
  7. 2 T parsley - chopped fine
  8. Dash of Tabasco (if desired)
  9. Salt to taste

Procedure:

  1. Steam until tender.
  2. Place in blender, mix together Lemon Juice, Olive Oil, and Grillo's Pickle juice.
  3. Turn blender on. Drizzle in liquid and puree until smooth.
  4. Remove from blender. Mix remaining ingredients in a medium sized bowl.




Ingredients:

  1. 1 Small Head of Cabbage (shredded as thin as possible)
  2. 2-3 Carrots (shredded)
  3. 4-6 Grillo's Pickles Spears (diced)
  4. 1/4 Cup Grillo's Pickle Brine
  5. 8-10 Spanish Green Olives (chopped)
  6. Mayonnaise
  7. Salt and Pepper

Procedure:

  1. Toss Cabbage, Carrots, Pickles, Brine, and Olives together.
  2. Fold in Mayonnaise, Salt and Pepper to taste.

  3. Note: If you like a sweeter Coleslaw try adding a small amount of Sugar to the Brine before adding to mix.




Ingredients:

  1. 1 Can Tuna (drained)
  2. 1/4 Cup Grillo's Brine (including Dill and Garlic diced)
  3. 4-5 Grillo's Pickle Spears (chopped)
  4. 1/2 Bell Pepper (diced)
  5. Bread Crumbs
  6. Mayonnaise

Procedure:

  1. Add chopped Pickles, Dill, Garlic, and Brine to Tuna. Let sit for at least 10 minutes. Add Bread Crumbs to soak up any extra moisture.
  2. Add Diced Bell Pepper (optional).
  3. Add Mayonnaise to taste.




Ingredients:

  1. 1 cup Greek Yogurt (plain)
  2. 3-4 Grillo's Pickles Spears (minced)
  3. Garlic and Dill from one container of Grillo's Pickles (minced)
  4. 1 1/2 tablespoons Grillo's Pickle Brine
  5. 1/2 tablespoon Fresh Lemon Juice
  6. 1/2 teasoppon dried oregano
  7. Salt
  8. Pepper

Procedure:

  1. Mix all ingredients together. Add Salt and Pepper to taste.




Ingredients:

  1. 8-10 Red Potatoes (Boiled until fork tender and cut into 1/2 inch peices.)
  2. 6 Hard Boiled Eggs (diced)
  3. 3/4 cup Celery (fine diced)
  4. 5-7 Grillo's Pickles Spears (diced)
  5. 1/4 Cup Grilo's Pickles Brine
  6. 1-2 Tablespoons Roasted Red Peppers (diced)
  7. 1-1 1/2 Cups Mayonnaise
  8. Yellow Mustard
  9. Paprika
  10. Salt
  11. Black Pepper

Procedure:

  1. Mix Mayonnaise with Mustard until a nice light yellow color.
  2. Stir in Pickle Juice, Celery, Red Peppers, and Pickles.
  3. Fold in Potatoes and Eggs.
  4. Add Salt, Pepper, and Paprika to taste.

Ingredients:

  1. 5 Grillo's Pickles Spears (chopped into bite sized pieces)
  2. 4 T. Aioli
  3. 4 Cup Shredded Boston Lettuce
  4. 1 8oz Wheel of Brie Cheese (cut into 12 pieces)
  5. 4 Pita Breads
  6. 4 Sheets of Aluminum Foil (about a foot long)

Procedure:

  1. Warm oven to 300 degrees F
  2. Put three pieces of cheese on each pita. Place pita on baking sheet and gently metl cheese being careful not to crips pita.
  3. Remove baking tray from oven.
  4. Spread 1 tablespoon of Ailoi on each pita, place 1 cup of lettuce in the center of each pita.
  5. Sprinkle pickles evenly amongst each pita.
  6. Roll up like a burrito, hold together with aluminum foil.




Ingredients:

  1. 1 pint of grillo’s green tomatoes
  2. 1 lb cooked pasta
  3. 1 red pepper chopped
  4. 2 ears of corn (or 1 can)
  5. 1 cup shredded carrots
  6. 1 Table spoon Dijon mustard
  7. 1/2 cup olive oil
  8. 1/3 cup liquid from tomatoes along with dill

Procedure:

  1. Cook pasta
  2. Mix oil, mustard and juice from tomatoes together
  3. When pasta is done and cooled mix the rest of ingredients together and serve.

Ingredients:

  1. 3 oz Double Cross Vodka
  2. 1 Jar Grillo's HOT Pickles
  3. Tabasco

Procedure:

  1. Add 3 oz Double Cross Vodka, 1 oz Grillo's Pickle Juice, and 2 dashes Tabasco into shaker.
  2. Shake & strain into martini glass.
  3. Garnish with Grillo’s HOT Pickle Spear.
